EDIT: Sorry I re-read your post and decided to edit mine.
You won't really see much happening in a mosque except for either people learning the qur'an or praying (or something of the sort) I mean compared to in a church where theres singing and somewhat dancing going on. Ask for the local imam after the prayer and ask to speak to him privately if you want and just tell him you want to be a muslim. I'm sure he would be glad to help.
