Sister I suggest you memorize from the Arabic one, and see the meanings from the Ibn Kathir one. One reason is that the Arabic one will be divided with memorization in mind, e.g. each page will end with an Ayah. Secondly, I'm think for the ibn kathir one you might mix the Arabic with the urdu, as in normally you sometimes need to remember the position of the start of an Ayah. The urdu part may interfere with that. Thirdly, if you ever lose the Ibn Kathir one, then you might not be able to buy a new one as easily as the Arabic one. I'm living in Singapore and use the pakistani mushaf, and i lost mine at a musalla and had difficulty getting the same copy because here the saudi one is more common.
As for arabic, i suggest you learn it properly as it will inshallah open a new world for you. The Quran is nothing like any book you ever read! And the translation is nothing compared to the actual words of Allah. One course available online is the madinah arabic course. The books and video lectures are all available here:

Its an awesome course. If you complete it inshallah, you will be able to read the Quran as well as the Ahadith of Rasulullah(s.a.w.) in Arabic inshallah. Trust me if you put in the effort once, the rest of your entire life will flip upside down because of Allah's words inshallah!
