I was looking forward to adopt a child as a single parent cuz I don't have plans to get married. But I came to realize that it's kinda haram and I'm pretty confused.. What am I missing here?

I also read that I can't give the adopted child my name, That's fine for me. So, If I don't know the child's father name then what name should I give her as a surname? Can I give her my family name? Or a totally different name?

As salaam brother.
It's fine go take care of kids and raise them and be their parents. The only problem is that they don't want you to change I think "just" the last name of the child. This is because it is possible that that boy/girl you will raise might end up later on marrying or something of that sort their brother/sister. But you can take care of kids and make them your family. Remeber our prophet Muhammad (pbuh) was an orphan. With that said, it is ok for us to adopt kids. I hope I helped a bit, and I to hope to adopt. Inshallah
