I do admire your approach in this matter as i know of many people who will just take one arbitrary instance of a possible diagnoses and then self apply it for the rest of their lives and not fast. Its highly commendable of you that you are trying negate all possibilities before nullifying fasting. May Allah SWT grant you Jannah on just that intent and thought alone.
Normally in western countries when a GP tells someone that they should not fast from a medical perspective - the GPS normally take the length of the fast into consideration together with the medical diagnoses. The problem here is the medical perspective takes the length of fasting into consideration meanwhile in Fiqh, it doesnt really consider the length (Unless you in a extreme latitude. The extreme latitude here is defined by ulema and you will you have find out from your local ulema if your country falls in that - i know that the UK doesnt fall in this category).
The logical way to medically validate a person not fasting is that the person will have to have the issue constantly irrelevant of the time of the year. Example a person who has sever Asthma will use an inhaling pump throughout the year. Failure of using the pump will consequently lead to respiratory failure and eventually death within minutes in many cases. That will be a medical valid case.
You are on the right track by experimenting as such, with fasting during shorter days to ascertain the consistency of the seizures. This needs to be reported back to your GP so that solid deduction can be made that fasting would be detrimental to you.
* * * It is very important that you DONT use one instance of a GP diagnoses not to fast, then, during your experimentation phase of fasting you end of Self diagnosing because then you using medical scholarship for one diagnoses but then using your own (non medical scholarship) for the remainder. This will show no consistency in your evaluation. So please report back to the GP the experiences of shorter fasting.
I do employ you to also please take the advice of all the other brothers and sisters concerning this topic as many would guide you onto other possibilities before you reach the possible conclusion of not fasting.
