after watching this video I decided that I'll pray 2 rakats everytime I do one thing that I tend to do a lot (it's embarrassing to say it explicitly)
however, everytime I do that thing and I want to pray 2 rakats, will I be able to pray the 2 rakats right then and right there regardless of the time of day, or would I have to wait for a specific time to pray it?

To be able to pray, first thing you have to do is to purify yourself by performing wudhu or ghusl as needed. Please see this thread for details: Basics of Tahaarah (purification)

Then you can pray as long as the current time is not one of the 3 prohibited times, ie (1) after Fajr until 20 minutes after sunrise, (2) at exactly midday just before Zuhr, (3) after Asr until sunset.
