Well, here is my dessert book for Li - full of desserts from around the world. :sister:

Salam.

Bismillah....


Here is the ultimate classic Tiramisu, I have made this and have tried it.
It is fantastic!

Tiramisu

INGREDIENTS:

2 cups mascarpone cheese
3 cups heavy whipping cream
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
3 tablespoons coffee mixed with a little water
1 teaspoon instant coffee granules
1 (10 inch) angel food cake
1/4 cup unsweetened cocoa powder

(Its traditional to put red wine in this dessert...so watch out!)

DIRECTIONS:
In a large bowl, combine mascarpone cheese, cream, sugar, vanilla, coffee liqueur, and instant coffee. Whip until stiff.
Split sponge cake in half, creating a top and bottom layer. Spread cream mixture on bottom layer, and replace top half of cake. Refrigerate for 1 hour. Just before serving, dust top of cake with cocoa powder.


(Note: My directions would have kept you sitting and reading for a week..or two. Above is the consize version).

something simple:

KOGIEL MOGEL:
1 yolk
4 big spoons of sugar
put in a mug and stirre it until it look like homogeneous cream.

don't ask about calories...

Tiramasu is NIIIIIIICE ......

BUT once i ate too much of it and i felt sooo sick i didn't sleep that night untill after fajr 6 sumthing maaan!!1

since then ..it's a NO GO ZONE for me ;D;D

Salam,

Please all, stop with the calories..its all a load of nonsence and we know it (the diets) won't last :rolls-eyes:

If you don't TRY making the cake, you will NEVER learn to bake or cook a good dish. Practise makes perfect...so don't be afraid. :)


Tiramsu is very very filling (as someone mentioned), but so are all other foods we tend to eat. Don't make excuses and start the baking!

An egg (organic will be best here)
6 ounces (150 g) mascarpone cheese (a soft, mild, creamy cheese that spreads and whips well)
1/3 cup sugar
4 ounces (100 g) raspberries

PREPARATION:
Pick out the four prettiest raspberries and set them aside. Blend the remainder, and filter the blend through a fine muslin cloth, collecting the juice while the seeds remain in the cloth.

Beat the egg yolk with the sugar in a bowl until the mixture is pale yellow and frothy.

Beat the egg white to firm peaks. Fold the mascarpone and the egg white into the sugary yolk mixture, and set a tablespoon of the resultant cream aside for decorating.

Mix the raspberry juice into the remaining mascarpone and divvy everything out into two bowls. Use the reserved white cream to decorate the crema (for example, by laying it out in a spiral or wavy pattern), dot each bowl with two raspberries, and chill them lightly.

(Note: You don't need to stand at the cooker to do any of this...so do try it!)

Here is my recipe.

250g Flour
75g/25g Butter
100g/75g Sugar
2 eggs

If you wish to go one step forward. Make 2 of the above. So the ingredients would be:

500g flour
150g/50g Butter
200g/150g Sugar
4 eggs

Then, having TWO CAKES made.
Remove the cake from the oven (when golden brown).
Flip the cakes onto a plate
Add strawberry jam to the bottom (whilst hot).
Allow it to cool down
Then, squirt some whipped cream on the jam.
Attach both bottom parts of the cakes together.
Let it rest:giggling:

And then...enjoy!:D

I would like something tasty , can be with choco too but i don't want the cake to look like a birthday cake. I made until now only a birthday cake for my mom and she liked it. I want to make another cake, can be with choco too but to be tasty and with wipped cream..she doesn't like the creams made from butter. Can contain choco too because we like it:)

I read somewhere bananas contain lot of lipids and are not good. I don't like the almonds.

I have found two:

Ingredients

3 c. sugar
2 sticks butter
6 eggs
3 c. plain flour, sifted
1/2 pt. whipping cream
Pinch of salt

1)Cream sugar and butter; add eggs, one at a time, beating well after each addition.
2)Alternate flour and whipping cream, starting with flour and ending wiht flour until all is used.
3)Generously butter and flour large tube pan. (Use pan with stationary bottom.)
4)Bake at 300 degrees approximately 2 hours.


This next one has MORE whipped cream. Even though you didn't want fruit, I still think this lovely fruit will make it worthwhile.inshAllah.

Ingredients

1 (9 inch) pastry shell
1 pt. fresh raspberries
2/3 c. sugar
1/4 tsp. salt
2 tbsp. cornstarch
2/3 c. boiling water
2 tbsp. butter
1 tbsp. lemon juice
3/4 pt. whip cream
2 tbsp. powdered sugar

1)Bake and cool pastry shell.
2)Wash berries and drain thoroughly.
3)Blend sugar, salt and cornstarch; stir in water.
4)Add 1 cup raspberries, place over heat and cook with gentle stirring until mixture becomes thick and clear (3 to 4 minutes).
5)Remove from heat, stir in butter and lemon juice. Cool until lukewarm.
6)Gently fold in remaining berries.
7)Cover and refrigerate until cold but not set.
8)About 1 hour before serving, whip cream until thick.
9) Sift in powdered sugar and continue beating until stiff.
10)Spread quickly over bottom of shell, leaving cream layer a little high around edge.
11) Turn berry filling into pie, spreading it out over the cream.
12)Return to refrigerator until ready to serve.

Well, hmm...how do I explain.

A pastry shell is. You know whne you eat a cusrad cake and it has the outer part that is floury? That is what a pastry shell is like.

Thank you for all the nice recipes. My daughter is going to be mad tho, cause I printed them for her to fix for me.

I like to try various foods from around the world. To share here is an American Indian Dessert. My wife was Cherokee Indian and much of her cooking was native American foods.

This is a Traditional Cherokee deessert

Pumpkin and Corn Dessert

1 small pumpkin
2 ears corn, cut from cob
1/2 cup whole wheat flour
Sugar or honey

Peel, seed and slice pumpkin. Cover with water and simmer until tender.

Place corn kernels in pie tin in 350-degree oven; bake for 15 minutes.

Add corn to pumpkin. Add flour, stirring constantly over low heat until mixture thickens. Add sugar or honey to taste. Serve hot.

Salam,

Something for the choco-holics.

1 c. flour
1 c. sugar
1/2 c. butter, softned
4 eggs
1 and a 1/2 c. (16 oz. can) Hershey's syrup


Mint Cream Layer:
1)In small mixer bowl, combine 2 cups confectioners' sugar, 1/2 cup butter, softened, 1 tablespoon water, 1/2 teaspoon mint extract and 3 drops green food color (optional); beat until smooth.

Chocolate Topping:
1)In small micro-proof bowl melt 6 tablespoons butter and 1 cup semi-sweet chocolate chips at high (100%) for 1-1 1/2 minutes or just until chips are melted and mixture is smooth when stirred.


1)Heat oven to 350 degrees.
2)Grease 9 x 13 inch pan.
3)In large mixer bowl beat flour, sugar, butter, eggs and syrup until smooth. 4)Pour into prepared pan.
5) Bake 25-30 minutes or until top springs back when lightly touched. (Top may still appear wet.)
6) Cool completely in pan.
7)Spread Mint Cream Layer on cake chill.
8)Pour Chocolate Topping over dessert.
9)Cover; chill.

Hmmmmmm....Masha'allah I have been reading your thread regularly sis.......and I saw a few recipes which looked interesting, particularly the tiramisu.

I really love baking Masha'allah, and every month I buy 3 different magazines to keep up with the recipes :statisfie

But these days I'm trying to do everything from scratch, like I quite buying graham cracker crusts and I start making my own graham crackers.

And also I'm trying to dig up any old long lost and forgotten 'traditional' recipes......like I'm trying out old Malaysian deserts and stuff that aren't that common anymore.......

I just love baking :wub:

Cherokee Grape Dumplings
* 2 quarts ripe, seeded grapes
* 3 cups water
* 2 1/2 cups sugar
* 2 tsp. baking powder
* 2 tbsp. melted shortening
* 2 tbsp flour
* salt to taste

Boil grapes in 2 cups water over medium heat, use a heavy pot. When mixture boils, stir in sugar. In a bowl mix 1 cup water, shortening, salt and baking powder with flour. Dumplings may be formed with floured hands and dropped into the boiling juice mixture. Cover the mixture, let the dumplings boil for a few minutes, then set without heat for 5 - 10 minutes.

Grape Dumplings, Updated

* 1 cup flour
* 1 1/2 tsp baking powder
* 2 tsp sugar
* 1/4 tsp salt
* 1 tbsp shortening
* 1/2 cup grape juice

Mix flour, baking powder, sugar, salt and shortening. Add juice and mix into stiff dough. Roll dough very thin on floured board and cut into strips ½" wide (or roll dough in hands and break off pea-sized bits). Drop into boiling grape juice and cook for 10 - 12 minutes.

Some Cherokee cooks continue to make their grape dumplings by gathering and cooking wild grapes, or 'possum grapes' instead of grape juice.

The John Howard Payne Papers, a document from 1835 where the elders were interviewed for their knowledge of the old ways, tells us that around 1800, a grape dessert was made from boiling the grapes and mashing them and then adding corn meal to make a thick consistency. This seems to be the origin of what has been enjoyed for the last one hundred years or so as "Grape Dumplings."


To me this is very similar in taste to the Pakistani Gulabjamun

Grape Dumplings, Updated

* 1 cup flour
* 1 1/2 tsp baking powder
* 2 tsp sugar
* 1/4 tsp salt
* 1 tbsp shortening
* 1/2 cup grape juice

Mix flour, baking powder, sugar, salt and shortening. Add juice and mix into stiff dough. Roll dough very thin on floured board and cut into strips ½" wide (or roll dough in hands and break off pea-sized bits). Drop into boiling grape juice and cook for 10 - 12 minutes.

Some Cherokee cooks continue to make their grape dumplings by gathering and cooking wild grapes, or 'possum grapes' instead of grape juice.

The John Howard Payne Papers, a document from 1835 where the elders were interviewed for their knowledge of the old ways, tells us that around 1800, a grape dessert was made from boiling the grapes and mashing them and then adding corn meal to make a thick consistency. This seems to be the origin of what has been enjoyed for the last one hundred years or so as "Grape Dumplings."


To me this is very similar in taste to the Pakistani Gulabjamun

For a dessert they are very low calorie and low cholesteral.

Even lower calorie if you have a source for the authentic native American ingrediants. Wild muscadine or catawba grapes, buck-wheat flour, corn flour or cattail pollen would be used in place of the wheat flour. Maple sap would be used instead of sugar. Shortening would not be used at all.

JazakAllah for that br Woodrow. Some of the things you mentioned, I doubt I have ever heard of before.Khaiyr.

Anyway, yesterday I made a fruit salad and added very cold 'double cream.' I must say, this has to be attempted.
Today, I just tried strwberries and grapes with double cream. Just as good.

You don't have to cook...just sloce the strawberries and grapes. And pour cream. Finish! Enjoy!

Strawberry Shortcake


2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup butter, cold and cut into chunks
7/8 cup milk

Mix and sift together dry ingredients. Working shortening with fingertips or a pastry cutter as you would make a pie crust or biscuits. Work quickly and keep everything cold.
And liquid gradually and blend only enough to make a soft dough. Turn out onto a lightly floured board. Roll lightly to 1/2" thickness.

Cut into 3 inch squares or with a round to 1/2" cookie cutter, or cut into six to seven inch circles for large shortcakes.

Bake in a preheated 450°F oven until shortcakes are crisp and very light and color, and this will depend on what size shortcake has been cut; the smallest been cooked in as little as 10 minutes or less, and the largest requiring 15 to 20 minutes, depending on your oven. Keep a sharp eye out and watch constantly to avoid scorching.

When done, remove from oven and allow to cool on wire racks, then split into halves as soon as possible.

Serve with a creme filling of whipped cream or pastry cream and top with fresh strawberries, strawberry sauce, and chocolate shavings.

Finally: Sprinkle with confectioners sugar and garnish with a sprig of fresh mint.

Is it Baklava!! I think it's Baklava what you're talking about. And is it like soaked in a sweet syrup? which is flavored with rose water, or soemtimes flavored with spices? And there's alot of layers of pastry and nuts right?

Yes this is Baklava ....

I make Baklava!! It's soooo heavenly but sooooooooooo sweet:exhausted

My friends love my Baklava :D

salam,

Chocolate Tortoni

Ingredients

1 cup cold whipping cream

1/2 cup cold chocolate syrup

1/4 almond macaroon, crumbs

1/4 chopped almonds, toasted

1/4 cup chopped cherries

1 Tbsp. plus 1-1/2 tsp. rum

Method

In small mixer bowl, beat whipping cream until stiff, gently fold in syrup.

Stir in almond macaroon crumbs, 1/4 cup almonds, chopped cherries and rum.

Spoon mixture into 4 dessert dishes, cover and freeze until firm overnight.

Let stand a few minutes before serving.

Garnish with cherries and almonds.

Finally....ENJOY!

Try this to balance the salts in the blood stream:

Aloe Vera jelly in a sugar syrup
chopped bananas
cream

it is yum and brings you down into your tummy really well. (effectively that is)

I found out that aloe vera has a component which can cause that the future genetics are a darker skin tone, and perhaps the same substance is in celery. It has the chemical abbreviation PaBa and is known to cause cancer. It is in some sunscreens also. I am not certain whether celery has that exact same substance, but the effect is similar to eat it in large doses. I walked a long way in the sun the other day and only had celery for fluids so found out, but the celery juice prevented sunburn.

I think that the salt combination with cream is effective for kicking in that liver action for the work to metabolise fat.

It is so yum and so filling from only one mouthful.

But now I am hankering for beetroot and wondering if celery is compatible with beetroot and chocolate cake. But, why will I wonder upon making foods which I want to indulge in if they are only any good at preventing indulgence?

just reading this makes me feel fat! Guys ive been on a long diet! I cant risk eating this yummy but dangerous food! Well Prophet Mohammed pbuh is right, a lighter body is a healthier body, ever since i started eat healthy food i feel so light and happy and i exercise alot too! The moment i eat smtg like fast food my tummy feels weird :)

Nope. But guess what? Today I went out and bought some chocolate cake mix and choco chip muffin mix to make for visitors tomorrow. Its second day of eid for me tomorrow AND we are going to do dhikr.inshAllah.
Ive baked cakes from scratch for mom and nan but not used powered mixture and baked for other people. Wish me luck! :D

Sis shanu...some of us need the extra chocltae toppings and the fattening food. :D But I agree, the less you eat the lighter you feel.
My moto: eat less...look less EXCEPT when it comes to chocolate. :giggling: :D

Brownies
Ingredients
1/4 cup margarine or butter, softened
1/4 cup fruit-based butter and oil replacement
2 ounces fat-free cream cheese
1 cup sugar
1/2 cup cholesterol-free egg substitute
1 teaspoon vanilla
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking powder
1/3 cup reduced-fat semisweet chocolate chips


Preparation
1) Preheat oven to 350°F. Lightly coat 9-inch square baking pan with nonstick cooking spray; set aside.
2) Beat margarine, butter replacement and cream cheese in medium bowl with electric mixer at high speed until smooth. Add sugar, egg substitute and vanilla; beat until smooth.
3) Combine flour, cocoa, salt and baking powder in small bowl. Add to egg mixture; stir just until flour is combined. Pour into prepared pan.
4) Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Sprinkle with chocolate chips; cool completely in pan. Cut into 20 brownies.

Once in awhile I get my daughter to make this. Sadly she has gone back to School. Decided to change her specialty. So these days she is not home long enough to cook what I want her to cook.




Jalaibi


Ingredients Instructions
1 cup maida
½ cup rice flour
2 cup water
2½ cup sugar
1 tsp. soda
¼ tsp. cream of tartar
6 green cardamom (Chhoti Ilaichi)
2 tsp. Rose water
Saffron (Zafran)
Yellow/orange food colour
Oil/ghee for frying
Mix maida, rice flour, soda and water and keep the mixture overnight in warm place.

Mix sugar, water, ilaichi saffron cream of tartar and cook to make it into thick syrup.

Deep fry the mixture in the curls using a nozzle like the one used for icing of cakes. Fry till light brown and pour into the syrup. DO NOT OVER SOAK.
Remove and let the excess syrup drain out.

Serving: 10 to 12 persons

I got this recipie from a friend. Its simple, easy, quick.........and delicious.
I made it last week and thought of sharing with you. Enjoy!

PineApple Delight

Ingredients:

1 tin pineapple... (550 g) approx
12 bananas
Condensed milk 1 small tin ( 180g) approx
2 packets of cream (total 400 ml) approx
A packet of sweet biscuits (90 g) 10- 12 cookies would be enough

Method:

First of all, take a bowl and pour the creams in it. Beat it well with a beater. If you dont have a beater, simply beat with a fork or a spoon. Keep it in fridge.

Till then, crush the biscuits, and keep them aside. Chop the bananas, such that you get circles of medium size. Chop the pineapple rings into 5-6 pieces.

Take out the cream, and during beating add the condensed milk to it.

Then, take a deep tray or bowl, put 2-3 table spoons of cream mixture to it. Spread it well. Then make a layer of bananas, and then a layer of pineapple. And then sprinkle 2 table spoon of the crushed biscuits on it. Then again top it with cream layer (3-4 table spoons) and then banana layer and then pineapple layer and then of crushed biscuits. Repeat until the ingredients finish. You can save some cream for the topping, if you want it to be too creamy. Finally, decorate with pineapple pieces................ If you want to eat quick, then keep it in the freezer for 30-45 minutes. However, in refrigerator, keep for 2-3hrs..... and Serve chilled

Its yummy.......

White chocolate and pineapple sponge cake with almond crunch :coolious: :coolious: :coolalien :coolalien

Ingredients
For the sponge cake
½ pineapple peeled, cored and thinly sliced
115g/4oz self-raising flour
115g/4oz caster sugar
115g/4oz unsalted butter
3 free-range eggs
75g/2¾oz white chocolate, chopped into small chunks
For the almond crunch
3 tbsp caster sugar
125g/4½oz almonds, crushed
To serve
double cream, for drizzling



Method
1. Preheat the oven to 200C/400F/Gas 6.
2. For the sponge cake, grease a small, shallow baking tray with butter. Place the pineapple slices onto the baking tray, spread evenly.
3. Place the flour, sugar, butter and eggs into a food processor and blend together to form a loose mixture.
4. Spoon the mixture over the pineapple and spread it out evenly with a spatula.
5. Sprinkle the white chocolate over the mixture and place in the oven to bake for ten minutes, or until risen and golden. Remove from the oven and allow to cool slightly.
6. For the almond crunch, place a small frying pan over a high heat. Add the caster sugar and almonds to the pan, and cook, shaking the pan occasionally.
7. When the sugar caramelises to a rich dark brown, remove from the heat. Immediately pour the mixture onto a cold non-stick surface and allow to set and become brittle.
8. Break up the brittle almond caramel with a rolling pin.
9. To serve, place a slice of pineapple sponge pudding on a dish. Drizzle with double cream and garnish with some of the almond crunch pieces.
