Samosa
Samosa is probably the most well known Indian snack and can be probably be found anywhere in the world. It can be seen in every sweet meat shop, snack bar, tea stall, or with the hawkers anywhere in India. It is also a common snack in other south asian countries such as Bangladesh and Pakistan.
Samosas are often served as chaat, mixed with fresh yogurt, tamarind chutney, chopped onions and coriander and choley. A typical samaosa consists of a fried tetrahedron shaped shell made of wheat dough with a potato, onion and peas stuffing. Though potato is the most commonly used stuffing in North India, minced meat and fish are also used. The non-veg version, called Luqmi, is a specialty of Hyderabad. In south India, samosas are small and flat, stuffed with a filling of onion.
Samosas are generally consumed as a tea time snack. There are baked versions of samosa too, which are healthier than the traditional deep fried ones.
Ingredients needed to make samosa are :
5 cups wheat flour, 6 tbsps ghee, salt, 8 boiled, peeled and mashed potatoes, 2 tsp cumin seeds, 2 tsp coriander powder, 3 tsp amchur(mango powder), red chilli powder, 2 tsp garam masala, common salt, cooking oil.
Mix the flour with the ghee and salt. Make a firm dough. Heat 2 tbsps of cooking oil in a pan fry the cumin seeds for some seconds along with coriander, turmeric, red chili, amchr and garam masala powder. Add the mashed potatoes to this spice mixture and mix well. Add salt according to taste. Simmer the stove and cook for 10 minutes.
Divide the dough you made earlier in to ball shaped portions. Roll each ball into a 7-8 inches diameter disk. Cut each disk into 2. Take one half disk and wet its straight edge lightly with water. Fold it into a cone. Fill this cone with the potato filling. Next, wet the open edges of the cone and press them on each other to seal it. Similarly make other samosas too. Now deep fry the Samosas till they become golden in color. Remove excess oil on paper towels. Serve hot with Tamarind Chutney. For a chaat variant, add chhole, yogurt and tamarind chutney with the samosa serving.
