Savory Chicken Couscous Recipe
Couscous makes a delicious alternative to rice or potatoes. This easy dish cooks up in less than 10 minutes with very little effort and goes well with meat, poultry, pork, and fish.
* 1/4 cup minced sweet onion
* 2 Tbsp butter
* 1-1/2 cups chicken broth
* 1 tsp fresh lemon juice
* 1/2 tsp onion powder
* 1/2 tsp garlic powder
* 1-1/2 tsp kosher salt
* 1/2 cup frozen baby peas
* 1 cup plain quick-cooking couscous
Gently saute sweet onion in the butter until the onion is translucent. Add chicken broth, lemon juice, onion powder, garlic powder, kosher salt, and baby peas.
Bring to a boil. Remove from heat, stir in couscous, cover and let stand for 5 minutes to absorb the liquid. Fluff couscous with a fork before serving.
