If you simply say astaghfurullah after committing kufr are you then accepted back into Islam or is it only accepted when you do the shahadah as well

This is something that only Allah the most high can truly answer, be steadfast and patient and remain sincere, and continue to ask Allah to guide you and forgive you.

I thought that the obly way to seek His forgiveness is by reciting Islamic shahada for each time you commit shirk or disbelief, isnt it?

In relation for protection from Shirk - Do You Know The Supplication Taught To Us By The Messenger of Allah Prophet Muhammad Sallallahu Alaihi Wasallam (Peace and Blessings of Allah be upon him)?
The Messenger (S.A.W) warned us against shirk, fearing that his Ummah might fall into it, and said “The thing I fear most for you is minor shirk.” The Messenger (S.A.W) also said: “Shirk among you is more subtle than the sound of the footsteps of an ant on a rock. Shall I not tell you of something which, if you do it, it will take that away from you both minor and major forms of it” (Saying this Du’a).
The texts of the Qur’aan and Sunnah indicate that faith is not valid and is not accepted unless two conditions are met – which are what are implied by the testimony that there is no god except Allaah. These two conditions are submission to Allaah alone (Tawheed), and denouncing and shunning all kinds of kufr and shirk
