From what i heard, the imaams are informed by the Head imaam, of the timetable of who leads what salat when.

and how do the guards know what house to go to?

Guards don't have to go the imaam's houses to take them, the imaams drive their own cars to the haram. The guards recieve them at the palace door adjacent to haram.

Anybody has recordings of recent Fajr and isha prayers? 21st Jan and 22nd Jan.

btw is the head imam of makkah sheikh sudais or sheikh subiyil

yeh someone told me aswell
but it makes sense to say Sheikh Subiyil and Sheikh Huthaify are head imams as there the eldest and have been imams the longest (i think)

Nopes. They are the ones given preference to do the Khatam al Quran dua in Ramadan, but they're not the head imaams. Maybe Sheikh Hudhaify is, but I never heard that...
