She seems in many ways to be less literal, or even less religious than I try to be, I don't want to disrespect my mother. She keeps saying about things in religion "it was a different time" "it can be interpreted this way," and gets irritated when she hears concepts like hudud punishments, jihad, etc. now she first tried to force, then bribe, then force, then boycott me into shaving my beard, even threatening to get my divorced father involved.

May Allah make it easy for you. Hadd punishments and jihad are clearly mentioned in the Qur'an, Allah enjoined them on the muslims.
Is your mother a muslim? If yes then why does she get irritated by what's in the Qur'an and also in the hadiths of His Prophet sallallahu alayhi wa salaam?
Definition of a muslim is someone who submits to Allah and His will.
Allah commands us to be kind to our parents and He despises severance of family ties, but if they tell you to do something other than in Islam, you can't obey them at the same time still be kind to them.

As in beard, inshaAllah you will find more information about it, maybe from a brother here or you can search islamqa.info
If I remember correctly, you can trim the beard to a certain length, and may be your mother will leave you alone, but Allah knows best.
