For people who truly find it difficult to learn daily prayers by heart, is it allowed to perform Salah, 5x a day, with a Salah guide book in hand? Will Allah (PBUH) accept this?

Yes! Absolutely! Id suggest writing what you cant remember as steps on a card or paper so its easier to manage.
 
of course. if you do not know any quraan verses you can write it down or read out of your book during salah. no problem.
this does not mean that you can continue doing salah by reading your guide. You should still try to memorize the needed verses as soon as you can.

But yeah...your salah is valid

InshaAllah your salah will be accepted. Allah knows what you are able to do and what you are not, your intention, your efforts, at any given time.
Offer salah that way until you are able to offer salah properly without guide book.

Also pbuh is not for Allah

Allah subhanahu wa ta'ala = Allah Glory be to Him and Most Exalted
Muhammad sallallahu 'alayhi wa salaam = Muhammad may Allah's blessing and peace be upon him
