Islam says that all humans were created from a single soul. Not only that, but it calls people "children of Adam" not only in the Qu'ran, but also in Muhammad's farewell speech. The Qu'ran says that the creation of Adam was like "Be" and it was. Muslims beleive that Adam was made with clay, water, dirt, and then the spirit(I believe called Ruh) was breathed into him, and he was created. Then, Eve was. And from there, all humans have been from.
So does this go against the belief that we all evolved? Yes, in my opinion it absolutely does! Because in my belief(I believe in evolution) we have evolved over thousands of years, and we were not breathed in a spirit or anything. We just.. Evolved from another species!
In terms of evolution of other species.. Islam does not deny nor affirm, as the Qu'ran/sunnah/Salafi are silent on the issue.
In terms of the age of the earth.. Islam does not dispute with modern science, as the Qu'ran/Sunnah/Salafi do not specify.
Remember.. Evolution is usually categorized in two branches. Macro and Micro. Micro happens all the time. Most Muslims do not dispute that.
It is Macro evolution(the belief that we evolved from another species) that Muslims dispute.

Friend, unfortunately I am not very wise man. I'm not sure that I can defend against your assertions here but I would say that if we broke the theory of Evolution down we might find that there is a lot which is shared with Islamic Theology (both are derived from the same author).
Well, I think humans are animals, I think that the soul depends on your definition. If by soul you mean when can ones tart thinking and feeling.. Well, we are not sure. Some say around 22 weeks, others say earlier. We are not sure. Animals have similar functions in the womb, so I would say they have a soul too.'We' have evolved over thousands of years or the vessel which now holds our unique person-hood has evolved over thousands of years? When is a man a man and no longer an animal? When is the soul of a child placed within him or her? Is the same possible in man? Could their be life without a soul? What is the Soul? Do animals have them? These are all questions we must ponder, I think, before we reach the conclusions you have reached. Honestly, I have much more to go on this journey before I will reach my conclusion.

Sure! I can get you verses from the Qu'ran that say that humans were made from X and all that if you want, but for now I will show you the verses that say that humans were created from one person.Please, offer me what you can to reflect on.
Allah states that He has created all mankind from Adam, peace be upon him, and from Adam, He created his wife, Hawwa' and from them, people started to spread. Allah said in another Ayah,
﴿يأَيُّهَا النَّاسُ إِنَّا خَلَقْنَـكُم مِّن ذَكَرٍ وَأُنْثَى وَجَعَلْنَـكُمْ شُعُوباً وَقَبَآئِلَ لِتَعَـرَفُواْ إِنَّ أَكْرَمَكُمْ عَندَ اللَّهِ أَتْقَـكُمْ﴾
(O mankind! We have created you from a male and a female, and made you into nations and tribes, that you may know one another. Verily, the most honorable of you with Allah is that (believer) who has Taqwa) ﴿49:13﴾, and,
﴿يَـأَيُّهَا النَّاسُ اتَّقُواْ رَبَّكُمُ الَّذِى خَلَقَكُمْ مِّن نَّفْسٍ وَحِدَةٍ وَخَلَقَ مِنْهَا زَوْجَهَا﴾
(O mankind! Have Taqwa of your Lord, Who created you from a single person, and from him He created his wife.)﴿4:1﴾ In this honorable Ayah, Allah said;
Allah the Exalted declares to mankind that He has created them all from a single person, `Adam, and from that person He created his mate, Hawwa'. From their offspring He made nations, comprised of tribe, which include subtribes of all sizes. It was also said that `nations refers to non-Arabs, while `tribes refers to Arabs. Various statements about this were collected in an individual introduction from the book, Al-Inbah, by Abu `Amr Ibn `Abdul-Barr, and from the book, Al-Qasad wal-Amam fi Ma`rifah Ansab Al-Arab wal-`Ajam. Therefore, all people are the descendants of `Adam and Hawwa' and share this honor equally. The only difference between them is in the religion that revolves around their obedience to Allah the Exalted and their following of His Messenger . After He forbade backbiting and belittling other people, alerting mankind that they are all equal in their humanity. Allah said,
﴿يأَيُّهَا النَّاسُ إِنَّا خَلَقْنَـكُم مِّن ذَكَرٍ وَأُنْثَى وَجَعَلْنَـكُمْ شُعُوباً وَقَبَآئِلَ لِتَعَـرَفُواْ﴾
(O mankind! We have created you from a male and a female, and made you into nations and tribes that you may know one another.) so that they get to know each other by their nation or tribe. Mujahid said that Allah's statement,
﴿لِتَعَـرَفُواْ﴾
(that you may know one another.) refers to one's saying, "So-and-so the son of so-and-so, from the tribe of so-and-so.'' Sufyan Ath-Thawri said, "The Himyar (who resided in Yemen) dealt with each other according to their provinces, while the Arabs in the Hijaz (Western Arabia) dealt with each other according to their tribes.''
Allah commands His creatures to have Taqwa of Him by worshipping Him Alone without partners. He also reminds to them of His ability, in that He created them all from a single person, Adam, peace be unto him.
﴿وَخَلَقَ مِنْهَا زَوْجَهَا﴾
(And from him He created his wife) Hawwa' (Eve), who was created from Adam's left rib, from his back while he was sleeping. When Adam woke up and saw Hawwa', he liked her and had affection for her, and she felt the same toward him. An authentic Hadith states,
«إِنَّ الْمَرْأَةَ خُلِقَتْ مِنْ ضِلَعٍ، وَإِنَّ أَعْوَجَ شَيْءٍ فِي الضِّلَعِ أَعْلَاهُ، فَإِنْ ذَهَبْتَ تُقِيمُهُ كَسَرْتَهُ، وَإِنِ اسْتَمْتَعْتَ بِهَا اسْتَمْتَعْتَ بِهَا وَفِيهَا عِوَج»
(Woman was created from a rib. Verily, the most curved portion of the rib is its upper part, so, if you should try to straighten it, you will break it, but if you leave it as it is, it will remain crooked.) Allah's statement,
﴿وَبَثَّ مِنْهُمَا رِجَالاً كَثِيراً وَنِسَآءً﴾
(And from them both He created many men and womenmeans, Allah created from Adam and Hawwa' many men and women and distributed them throughout the world in various shapes, characteristics, colors and languages. In the end, their gathering and return will be to Allah.
