Sourdough_miche_26_boule-1.jpg

bought this today and found out it originated in ancient Egypt ..

Sourdough is a type of bread produced by a long fermentation of dough using naturally occurring yeasts and lactobacilli. In comparison with breads made quickly with cultivated yeast, it usually has has a mildly sour taste because of the lactic acid produced by the lactobacilli.
The preparation of sourdough begins with a starter made from a mixture of flour and water. As it ferments, sometimes for several days, the starter is refreshed with flour and water, then mixed into the bread dough, which is kneaded and allowed to rise slowly before baking.
Sourdough may have originated in Ancient Egypt around 1500 BC and was probably the first leavened bread. It was the usual form of leavening until the European Middle Ages,[SUP][1][/SUP] when it was replaced by barm from the beer brewing process, and then in the 19th-20th century by baker's yeast. It was historically important in the production of rye-based breads, where yeast does not produce comparable results. It was the main type of bread made in Northern California during the California Gold Rush and it remains a part of the culture of San Francisco today. The sourdough tradition was carried into Alaska and the western Canadian territories during the Klondike Gold Rush. Many breads around the world use similar techniques. Although sourdough bread was superseded in commercial bakeries in the 20th century, it has undergone a revival among artisan bakers.

I love sourdough. Especially how you can keep a part of the batch to keep refrigerated - and then mix with the next batch to turn into new sourdough ...

But strictly speaking, does the yeast in bread not produce alcohol in the rising process?
The essentials of any bread dough are flour, water, and of course yeast. As soon as these ingredients are stirred together, enzymes in the yeast and the flour cause large starch molecules to break down into simple sugars. The yeast metabolizes these simple sugars and exudes a liquid that releases carbon dioxide and ethyl alcohol into existing air bubbles in the dough.

I expect that the alcohol is removed in the baking process.

From Sr. Aisha,
may Allah swt grant her the best state of health and iman.

What did you eat today?

:sl:

Today for suhoor I barely woke up on time. I managed to make a quick banana smoothie. So quick that there were actual chunks of banana left at the bottom.

What did you eat for suhoor or iftaar today?

وعليكم السلام ورحمة الله وبركاته

Merged threads. Post pictures of your Suhoor/Iftar dishes here :)

Thank you Sis Aisha, I didn't know a previous thread existed :p

Sis Juwariya...Will you adopt me?! The food looks sooooo mouthwateringly delish! :statisfie

^^^^^^Wow mashaAllah the food is looking very good. Especially the biryani dish, which is a favorite of mine.

I woke up late again today! Had the same banana smoothie, this time with a pinch of cinnamon and sprinkle of nutmeg.

Last night's iftaar I didn't eat much, was rushed to get ready for taraweeh. Only had half a chicken roll and some fruit salad. After taraweeh, I had like 10 dates (they were good!) and made an over easy egg with toast.
