When i stated proofs, i meant proofs from Qur'an or Sunnah. Therefore, if Allaah says that He created Adam with His Own Hands, we believe that to be literal. Unless the Messenger of Allaah (peace be upon him) had stated that it is in a metaphorical form. And i don't think (from the knowledge that i have) that he ever did.
There are some groups who may say that in that verse, Allaah is referring to Hands as 'power' [i.e. Hands = Power - in the metaphorical sense] - yet that doesn't make sense, since one of the reasons why Adam is honored is because Allaah did create him (Adam) from His own hands. Yet if Allaah was referring to that verse to be 'power' [in the metaphorical sense] - then the simple response is that Allaah created everything with His power anyway. Therefore that argument doesn't really have any strength to it.
So if Allaah says He has eyes, we say - we believe. We don't question the "how's" in regard to unseen matters. I.e. How does Allaah look like. etc. That will only be clear or apparent in the hereafter.
And Allaah knows best.
